Cranberry Pistachio Energy Bites

I made these super sweet nutritious snacks this weekend. The recipe is shared from gimmesomeoven.com Super easy. Let me know how you like it. Laura


Ingredients:

  • 1cup chopped dates

  • 1/2 cup honey

  • 1 Tablespoon chia seeds

  • 1 Tablespoon ground flax seeds

  • pinch of salt

  • 1 1/2 cups uncooked old-fashioned oats

  • 1 cup shelled pistachio nuts

  • 1 cup dried cranberries



  • Pulse the dates, honey, chia seeds, flax seeds and salt in a food processor

  • Add Oats, Pistachios and cranberries into a large bowl and stir

  • Chill mixture for 30 minutes. Form into balls or bars.

  • Store in refrigerator for 2 weeks.


After chilling for 30 minutes, the mixture was still too sticky. It stuck to my hands, but not to itself enough to form balls. I ended up pressing them into a mini muffin pan and that worked great.
