Ingredients:
1cup chopped dates
1/2 cup honey
1 Tablespoon chia seeds
1 Tablespoon ground flax seeds
pinch of salt
1 1/2 cups uncooked old-fashioned oats
1 cup shelled pistachio nuts
1 cup dried cranberries
Pulse the dates, honey, chia seeds, flax seeds and salt in a food processor
Add Oats, Pistachios and cranberries into a large bowl and stir
Chill mixture for 30 minutes. Form into balls or bars.
Store in refrigerator for 2 weeks.
After chilling for 30 minutes, the mixture was still too sticky. It stuck to my hands, but not to itself enough to form balls. I ended up pressing them into a mini muffin pan and that worked great.
